In our watermill with its 6 double rolling chairs, diverse grain are processed into particularly smooth & homogeneous wholemeal flours for best baking properties-thanks to low starch damage through a special diagram. When producing whole grain flours, the full grain will ground. That is why they contain all components of the grain, have the highest mineral content and are rich in fiber. The minerals of the grain are mainly located in these edge layers. The mineral content corresponds to about half of what contains a whole grain flour. This wheat flour contains 1050mg minerals per 100g of flour.
